Amidst casual elegance --- windows flank the entire front; plush booths are especially romantic --- chef Scott Wall brings glamour to American classics, reminding us in no uncertain terms why pork chops, pot roast and, yes, even meatloaf have been long-beloved in the land of the free. With farm-to-table fealty and an eye to sustainability (carefully sourced seafood, free-range chicken, grass-fed beef), Wall awakens old favorites, adding distinctive touches. Chanterelle-studded mushroom-barley soup is hearty; goat cheese eggplant dip is as smooth as cumulus clouds; Meyer lemon salsa teases steelhead salmon; mashed potatoes are horseradish-spiked; crème brûlée comes in seasonal shades, such as pumpkin. Meat-averse diners will feel right at home with generous salads, sides and satisfying entrées such as a towering wild mushroom risotto topped with crispy fried onions.
