Celebrity chef Chuck Hughes’ second restaurant is a winner. Though his chef de cuisine, Danny Smiles, came in second on Canada’s Top Chef, his kimchi crab cake and deep-fried sushi rice appetizer deserves a medal. At this seafood-heavy establishment, fine dining doesn’t fit into its traditional mold. International flavors combine with local, sustainable ingredients. Instead of baguette, there are homemade grissini to quell your hunger while you wait for Portuguese-inspired hake and clams in maple dashi; and the shrimp on cornbread has Southern flair and a modern plating: two balanced slices of crispy bacon atop the garlic and butter sauce-drenched dish. A colorful toss of chives, green onions and shallots is all that keeps it from becoming dessert --- a good thing, because you’ll want to save room for the heaping plate of fluffy pancakes (refreshingly, not crêpes) with Pimm’s butter and sugar cream. Come summer, enjoy it all on the restaurant's back patio. Since Le Bremner is home to some of the city's top mixologists, start with the evening's signature cocktail made with fresh, seasonal fruit, herbs and homemade syrups. Then move on to a glass or a bottle from the extensive, carefully chosen wine list of mostly private imports.
