Some of the city’s top chefs and pastry chefs have helmed this Old Port restaurant’s kitchen. Now Quebec TV personality Guillaume Cantin and east coast patissier Brian Verstraten are in charge, re-infusing the restaurant’s menus with their creative take on French dishes. Take, for example, the liver mousse, which Cantin blends with red beets, black walnuts and dill, giving it a mix of earthy, sweet and refreshing flavors. Or the boudin blanc, which he combines with summer-sweet kohlrabi, tarragon and raspberries. Main courses include a lovage linguine made with local mussels, peas and crispy chicken skin and Quebec duck breast with heirloom oats, chanterelle mushrooms, local cherries and rosemary. If a decision proves difficult, opt for the five-course tasting menu. The accompanying wine pairings are mostly unique, privately imported French vintages. A vin jaune will go with the Quebec cheese course, while the St-Damas sparkling blueberry wine pairs with the coffee and pecan tart with blueberry sorbet, maple jelly and milk chocolate. Or end on a lighter note with a bowl of “Mr. Legault’s Strawberries” --- local berries accompanied by lemon cream, sumac jelly and Thai basil.
