Liberty Bar makes its home in a converted convent in King William, where it's painted an unrepentant coral. The cuisine’s Texas and Mexican roots show through at almost every turn. Old favorites such as the grilled potatoes with aïoli and goat cheese with piloncillo retain their ritualistic appeal, and the accompanying house-made bread is worthy of hallelujahs. We also recommend the virtuous pot roast bowl as well as the down-home grilled Muenster cheese sandwich with chile morita. Yes, we have quibbled over the texture of some grilled sweetbreads, but note the novitiate-like appearance of B.Y.O. pizzas. The quirky wine list, not large but unique to a fault, inspires devotion. Desserts transcend, with chess pie and Virginia Green’s chocolate cake the platonic ideal of all things baked.
