LIVELLO, the signature restaurant at L'Ermitage Beverly Hills, has undergone some changes since its debut. What was once the lounge now serves as the main dining area, while the adjacent domed room (LIVELLO's Pavilion) caters to private events. The garden patio remains a desirable setting with its fireplace and waterfall. Overseeing the kitchen is chef de cuisine Roger Thomas, whose culinary career has included stints in France and Italy. His dinner menu may feature starters of housemade meatballs, beet salad with buffalo mozzarella, or salmon tartare with Persian cucumber, preserved lemon and avocado. Continue with pasta or entrées like fennel-crusted lamb rack with caponata, grilled Roquefort polenta and sauce bordelaise. Sweet endings include profiteroles and a warm apple tart. Select from an array of wines, which you'll see displayed in refrigerated glass-paneled cabinets.
