In a modern setting with Majorelle-style Art Nouveau woodwork and tables devoid of tablecloths, chef Julien Dumas has succeeded Alain Senderens, who helmed the restaurant for 30 years. Following the departure of the latter, the place has taken back its former name, Lucas Carton. Dumas, who honed his chops with Jacques Maximin at Rech, delivers sophisticated and refined fare. The menu features squid tagliatelle perfumed with yellow wine and enhanced with button mushrooms, pistachio-crusted pigeon with turnip spaghetti, and crystallized pear with ginger. Expect numerous wines by the glass, including a Volnay 1er Cru Les Fremiets 2008 from Henri Boillot and a Pauillac Château Duhart-Milon 1996.
