Luke Palladino restaurant is sleek and modern, featuring an open kitchen that produces authentic but not always the usual and customary Italian fare. Seafood brodetto is a symphony of seafood --- lobster, shrimp, calamari, clams, crab --- cooked with roasted cherry tomatoes and cannellini beans; sformato is a savory, elegant flan made with shaved asparagus and truffled egg salad. Pastas are handmade daily with organic ingredients. Fazzoletti, or “silk handkerchiefs,” are glistening ribbons of pasta dressed with a fragrant pesto. An extensive wine list is heavy on Italian selections and a bit pricey, but then this is Atlantic City, land of high rollers. A handful of desserts tempt; the best is affogato, a vanilla gelato smothered in frozen limoncello, espresso, crumbled amaretti cookies and a dollop of whipped cream.
