Chef Jason Atherton may have departed but his legacy is well executed by the team at Maze. The tapas-style menu has around twenty dishes and each one is a star, or you can go the conventional route if you prefer. You’ll encounter an explosion of different tastes, all nicely cooked and each offering something subtly different: scallop ceviche with truffle and yuzu; foie gras mousse with cherries, serrano ham and almonds; beef fillet with turnips, braised cheeks and marrow bone. It’s a joyous experience, and you get the feeling that the kitchen loves the act of creation, which never goes over the top or becomes experimentation for its own sake. Wines are well selected, and the service is friendly and casual. The result is a happily buzzing restaurant with the punters appreciating the honest cooking. From the set menu four courses are £35, five are £42, six are £50.
