This Cantonese cum Szechuan restaurant inside a historic colonial house is located in the chic Rochester Park dining precinct of Singapore. Spotlights and low-hanging bronze lanterns illuminate the dark chinoiserie-styled interior, while a black slat divider separates the cozy dining room from the reception area. By dusk, the best high-back Chinese-style seats in the house are at the outdoor timber dining deck. Do not be surprised if you see the same dish on every table in the house --- the authentic Beijing duck is the name of the game here. The fowl is prepared by chefs trained in China according to age-old recipes, roasted in a custom-made wood-fired oven then carved by your table and served three different ways: crisp skin dusted with sheer sugar; Cantonese style --- crêpe with sweet sauce, leek and sliced cucumber; and Szechuan style --- crêpe with chopped garlic, white radish and Tientsin cabbage. Also notable are the duck noodles as well as the lobster noodles, silky and fragrant with half-shell baby lobster. Durian lovers should not miss Min Jiang’s pungent durian pudding, but there is also mango pudding or the refined double-boiled hasma made from the dried oviduct of snow frogs.
