At this family-run restaurant, the menu --- in English, Chinese, Vietnamese and Thai --- expresses the cultural blending that is the experience of the Chaozhou Chinese, who migrated to Southeast Asia in the 1850s. There are influences from Cambodia and Thailand, resulting in seafood fare that is refreshingly light. Several varieties of soup are on offer, like lemon tilapia and braised crab and fish maw. There are delicacies such as lobster in a ginger and green onion sauce and abalone with black mushrooms, alongside more rare seafood presentations using elephant clams, oysters and squid. Seasonal whole fish changes regularly and can be steamed, fried or braised, and served with sauces like black bean and sweet-and-sour. Frogs' legs are cooked in a spicy Chinese-style hot sauce, or in a classic French butter sauce.
