Pierre Hermé is one of Paris’ most celebrated pâtissiers, and his seasonal collections of macarons and other confections are as anxiously awaited as the lines of haute couture turned out by the city’s most famous fashion designers. The flavor combinations for his macarons are audacious, and while some don’t succeed, most of them --- no matter how unlikely they may initially appear --- usually do, thanks to the finesse of this artist, whose original jewel box of a shop usually has a long line out the door. Anise and saffron; rose, lychee and raspberry; white truffle and hazelnut; olive oil and Mandarin orange represent some of the bold yet balanced marriages of flavors employed by Hermé. Traditionalists will be equally rewarded with chocolate, pistachio or caramel with sea salt. Although the macarons receive the most attention, Monsieur Hermé’s magic transcends the signature meringue sandwich cookies. The petite tarts and cakes are true works of art, and they often taste as good as they look. A peach- and rose-flavored tart is scented with cumin for an exotic Middle Eastern air, while a dome of bittersweet chocolate and crunchy, salty caramel (“Plénitude”) is yet another possibility. The viennoiseries --- croissant, pain au chocolat and a bostock (brioche with almond cream) --- are also exceptional.
