Chef Brian Armstrong has changed the vibe at this sleek, contemporary restaurant, but continues to infuse classic dishes with Texas-bred products and ingredients, including those gathered from the herb and vegetable garden on the hotel's terrace. Signature selections evoke haute cuisine with a Southwestern flair --- try the special tomahawk chop or the Superior Farms rack of lamb with artichoke, olive and fava bean sauté and ricotta gnocchi. Breakfast features items such as brioche with Muscat and raw-sugar caramelized pears with blueberry-maple syrup, and rancher eggs with blue corn tortillas, refried beans and jalapeño jack cheese. Lunch ranges wide, from a niçoise salad made with ahi to a classic burger with all the trimmings. Desserts also draw upon regional inspiration, with Mexican chocolate fondant topped with horchata ice cream and roasted banana caramel, and local cheeses served with Texas bee guild honey, port-poached figs and crusty bread. The wine list showcases grapes from around the world with many unknown but excellent wines on the list. The sommelier encourages guests to expand their wine drinking knowledge by trying unusual grape varieties for pairings.
