Rooster and the Pig Restaurant Review:


Rooster and the Pig is a locals' hideaway set in a small Palm Springs strip mall. Dining is first come, first served, and guests are lined up to get in from the time the doors open. The food here is Vietnamese-American by chef/owner Tai Spendley, who struck out on his own after stints at various restaurants in the area, including now-shuttered Jiao. The interior is simple and charming, with light woods and a dining counter with eight seats at the back of the restaurant. Herbs and ingredients have been carefully sourced to create flavorful dishes such as Vietnamese crispy rice paper rolls with wood ear mushrooms, cabbage and glass noodles; shredded chicken, purple cabbage, fennel, dates, cashews and cilantro; and lemongrass pork belly lettuce wraps. Larger plates range from crispy whole red snapper with pineapple, tomato, ginger and lotus stem to a banh mi burger with pickled daikon, mint, house mayonnaise and sweet potato fries. There is a brief wine list plus a beer menu that has been curated to complement the food. Service can be rushed, but this place is about getting a quick, delicious dinner.
