About the restaurant: Root Down, a globally-inspired eatery from restaurateur Justin Cucci, the former co-owner of New York City's Ye Waverly Inn, has secured its place as one of Denver's hippest restaurants. Housed in an antiquated service station, with an old bowling alley as a bar, large windows that frame the city skyline and repurposed furnishings from the 1950s, it's a conversation piece that will keep you buzzing while noshing on chef Jeremy Kittelson's menu.

Food & Drinks: The ambitious chef incorporates fresh herbs and vegetables from two gardens --- one on the roof and one on the patio --- in his dishes, which are as lovely to look at as they are to eat. Creative small plates, like the veggie burger sliders with red pepper jam, will make vegetarians do the happy dance, while the beef carpaccio, graced with a grilled fennel and chili salad, brown mustard and olive oil foam, is a must for carnivores. Main dishes, most notably the Moroccan-style snapper rubbed with lemon, cumin and coriander, are worth coveting. The boutique wine list is a boon for oenophiles, and the craft beer selection, coupled with some of the most innovative cocktails in the city, also make Root Down a popular oasis in which to drink yourself into blissful oblivion.
