At the height of Santa Fe's tourist season, swarms of fatigued and hungry shoppers wait as long as 45 minutes to sample one of The Shed's famous blue corn tortilla dishes --- burritos, tacos and enchiladas (try the chicken version). The restaurant, founded in 1953, is located inside a meandering 1692 hacienda with doorways and walls decorated with colorful folk art. The dishes are based on the traditional cooking of the Pueblo and Hispanic peoples and are covered with potent red chile. Notable are the green chile soup and the burger topped with a slab of green chile and served with chips and marinated garbanzo salad. Chile abstainers can find comfort in the surprisingly zesty lemon garlic shrimp and the refreshing cold red raspberry soup. For a homemade dessert, go for the apple pie or frozen mocha cake.
