Steak & Whisky Restaurant Review:

Steak & Whisky in downtown Hermosa Beach is a modern American steakhouse from chef Tin Vuong and restaurateur Jed Sanford, who through their company BlackHouse Hospitality are responsible for South Bay restaurants Abigaile, Little Sister, etc. Set in a 1920s historic brick building, the modestly sized space feels like a rustic interpretation of a brasserie with its tile flooring, brick walls, exposed beam ceiling and leather booths (seating two, four or more). There's also banquette seating as well as two counters: a marble one with regular chairs by the bar and a taller specimen with stools next to the window. Loud, eclectic music plays on the sound system. The typical steakhouse classics, accompaniments and sides check in, along with interesting salads and starters such as the smoked ham hock ravioli. The kitchen team, led by executive chef John Shaw, is particularly proud of the house sauces, 30-day dry-aged steaks and the sourcing of superior beef such as Japanese Miyazaki Wagyu. Among the other entrée options, we recommend skipping the seared tuna in favor of the roasted duck breast with gingered wild rice, black plums, baby turnip and pickled ramp. Overall, the flavors are great but many dishes came out over-salted. Desserts like the maple panna cotta are nothing to write home about. Find 200-plus wines on a list that features many Napa Valley and Bordeaux options. There's a wide selection of wines by the glass plus premium offerings accessed via the specialized wine system Coravin. The bar presents about 80 whiskies from various countries but general manager Micah Clark is working on boosting that number up to 120. Meanwhile, bar manager Ricky Ortega serves up specialty cocktails and can also create something to suit your tastes.
