Chef Dale Talde achieved fame on Bravo’s “Top Chef.” Since then, he’s produced this eponymous restaurant in Brooklyn that’s more than just a neighborhood spot --- it merits destination status for hungry fans of pan-Asian cuisine from the five boroughs. The Spartan space implicitly puts the focus on what’s on the plate, and what it holds is generally quite satisfying. Pretzel pork and chive dumplings and the shrimp-stuffed Saigon crêpe (a riff on banh xeo) are good meal-starters. Looking for carbs? The lobster tom kha noodle dish is a deeply rich, coconut milk-filled delight. Likewise, the whole roasted branzino, spiked with turmeric, is well-executed, flaky and light. The wine list consists of mostly mid-priced bottles from around the globe, with a handful of affordable options by the glass.
