It may take a little time for Baltimore to discover Waterfront Kitchen, which is tucked inside a museum in the off-the-beaten-track outskirts of Fells Point. (The generic name doesn’t help either.) Once found, though, this handsome restaurant is sure to become a destination. A sweeping harborscape takes in the iconic Domino sign. The modern dining room has a sophisticated sparkle, and the contemporary American menu, created by chef David Hynes, is all those things beloved of 21st-century Baltimore: it’s seasonal and created with locally sourced products. Haute-Maryland entrées include the pork chop with black bean, plantain hash and pineapple mojo glaze; roasted organic half chicken with basmati rice cake, ginger-scented baby bok choy, and Korean barbecue glaze; and pan-roasted rockfish with caramelized Brussels sprouts, fennel-apple salad and violet mustard. There are cooking classes and themed dinner cruises as well. Waterfront Kitchen is also a restaurant with a mission: through its partnership with Living Classrooms, it grows its own produce while teaching local school kids about gardening and nutrition.
