Yuzuki’s authentic Japanese cuisine embodies the painstaking and delicate discipline of “Washoku”-style dining. From the sustainably-farmed cedar chopsticks to the chemical-free water filtration system, all imported from Japan, dinner is a study in purity. Spotlights from high ceilings focus attention to a dozen serene wooden tables, where locally sourced produce meets immaculate coastal fare. House-made tofu is custard-like and the flavor blossoms with the accompanying Maltese sea salt. The Mozuku seaweed in tosa vinaigrette is a delightful riddle of lemon and restrained ginger, and the Dungeness and Naruto seaweed salad playfully incorporates delicate chrysanthemum. Rock fish and burdock root dumplings introduce new complexities with each successive bite. Yakitori is herbaceous, and flavorful tempura defies physics with an almost imperceptible batter. Ginger sorbet is gleefully snowy and refreshing; the Anmitsu an adventure. Owner and saké sommelier Yuko Hayashi advises on a well-rounded troupe of rare selections, available by the glass, bottle or flight, including Hayashi’s own house-made umeshu crafted from green plum.
