Start with a Mojito de Castro (Cruzan Junkanu rum with lime juice, crushed mint and sugarcane juice) to get in the spirit, then make your way through the spunky menu, a primer on the Spanish, African and Caribbean influences that power Cuban cuisine. Ceviche of red snapper, scallops, shrimp and squid is the ideal starter, with habanero contributing both fire and a fruity essence to the proceedings. Follow up with lechon asado---slowly roasted marinated pork---served with mashed yucca, black beans and rice and a garlicky mojo sauce.
