Former executive chef of Rao's at Caesars Palace Carla Pellegrino made a name for herself when she defeated Bobby Flay on his "Throwdown" TV show. Photos of couples embraced in ‘the kiss’---the restaurant's Italian-language translation---adorn the walls, and white exposed brick suggest a bright and airy feel, in keeping with the Tropicana’s South Beach theme. Begin with the insalata caprese---Neapolitan buffalo mozzarella and heirloom tomatoes dressed with extra virgin olive oil, garlic and basil. We also like the tagliolini frutti di mare---noodles infused with black squid ink and married with shellfish. For a hearty meat dish, try the pan-seared 16-ounce veal or double-cut pork chop sautéed in sweet and hot cherry peppers. Finishing touches are the huge portion of tiramisu---mascarpone cheese, coffee sabayon and Irish cream; or the mango panna cotta served with kiwi sauce, pomegranate seeds and raspberry sorbet. Complementing the classic fare are wines that hail mainly from the Tuscany and Piedmont regions of Italy, along with some worthy choices from Napa and Slovenia.
