About chef Josef Centeno: Josef Centeno’s kingdom of stylish and lively DTLA restaurants includes Bäco Mercat, Orsa & Winston, Ledlow, PYT and Bar Ama. He’s elevated the area’s dining scene significantly, and his well-loved bäco sandwich has become something of a cult favorite.

The décor: It’s no wonder then that Centeno created BäcoShop, a fast-casual iteration that is a temple to his sandwich, and gifted the Westside with a lovely, airy location in Culver City. Perched on the corner of Washington Boulevard and Irving Place, the eatery is spacious and bright, with tall windows, white chairs and tables, and an artsy earth-tone palette.

Likes: the bright, attractive room has great atmosphere; service is super fast; the soft serve dessert.
Dislikes: we miss some popular bäcos we crave from Bäco Mercat, namely the “Original” of pork, beef carnitas and salbitxada.

Food & Drinks: In the fast-casual DIY mold, you can choose a traditional foldover bäco, which uses the signature baked flatbread, or a bacorrito, using the unleavened bread wrapped more like a burrito. Then select the filling; the grilled steak was our favorite, with a coffee and red chile rub, charred scallion crema, almonds, chimichurri, escarole and pickled red onions. Slow roasted pork with green peppercorn mustard, cotija cheese and paprika aïoli is also a good choice, as is chile shrimp wrapped with sriracha, lime aïoli, mint and buttermilk cabbage slaw. You can make any filling into a bowl on top of red quinoa, black lentils, burrata and brown rice. Try at least one of the well-composed salads, such as kale, cauliflower and quinoa. Save room for a quite irresistible dessert of vanilla soft serve topped with a mixture of ground cardamom, blueberry, raspberry, peanut, coconut and almond, and drizzled with honey. To drink, find Venice Cold Brew, daily aguas frescas and, happily, beer and wine including the Greek Zoe rosé.
