Michael Bao Huynh can do no wrong. Or at least that’s how it seems. After opening chic BarBao on the Upper West Side, he went downscale and began sprinkling Vietnamese sandwich shops throughout the city, first in Murray Hill and then in the East Village. His most ambitious is in the West Village, which doubles as a pho restaurant. Baoguette/Pho Sure is a banh mi shop up front (the signature pork and pâté-studded Baoguette sandwich is addictive) and a smarter-looking pho restaurant in the back, complete with table lamps and cozy booths. The beef-laced pho broth is about as rich and comforting as can be. The meat, thinly sliced rare beef, shin and brisket, melts on the palate. The menu also offers a series of smaller bowls---including beef tongue, beef belly, hen’s caviar, and something called “bull’s peen” (we’ll let you figure out that one)---but they are meant as an addendum, a perk to be added to the larger bowls of pho.
