Bar Sajor takes full advantage of its dramatic, soaring windows, and a retro-chic vibe, but in a fresh, thoroughly updated way. This extends to the seasonally driven menu. You might encounter wild king salmon cured in candy cap mushrooms and brown sugar with braised seaweed, daikon and horseradish. In the evening, a wood-burning oven crisps poultry and nicely chars thick steaks. The house bread is some of the best in the city: rustic and deeply complex with a chewy crust for added character. While the European-driven, well-chosen wine list is fairly short, there's a notable selection of hard cider. The house-fermented kombucha is also a kick. A plate of simple cookies adds to the homey feel of this popular spot, which is named for the chef's mother and pronounced “SIGH-your.”
