: Chef Walter el Nagar brought his "New Wave Italian" cuisine to Venice with his Barbershop Ristorante pop-up at LOCAL 1205 in November 2013. The eight-course menu ($95) featured dishes like Santa Barbara sea urchin ravioli with scallop-moka, live scallop and squid ink oil; crab risotto with huitlacoche and Oaxaca cheese; and an eggplant dessert of candied baby eggplant, hot chocolate foam and cider ice cream. The meal was infused with molecular touches from start to finish. Guests imbibed only water, as there was no wine or other alcohol available (and BYOB was not allowed).
