| This sassy, retro wine bar playfully contrasts with Calistoga’s historic façades. The scene: red leather banquettes lining walls decorated with mini tiles or swirls, caged lamps, metal accents---including a silver-dipped mounted stag’s head---and groovy digital lounge music. Nibble addictive Parmesan rosemary breadsticks at the central bar as you peruse a list of two dozen or so wines by the glass (and more by the bottle). Most of the fare is hearty enough to soak up the day’s wine tasting: fried calamari, braised short ribs with celery root and chocolate espresso sauce, chicken thigh with celery root and quince. Pastas might include gnocchi with duck, butternut squash and ginger, and spaghetti with baked filet mignon meatballs. The best part may be dessert, specifically a cocoa tartlet stuffed fat with oozy caramel, slicked with a thin-coat of chocolate and sprinkled with sea salt; it rides shotgun with pistachio tuile overloaded with dense, intense pistachio cream. |
