| Owners Paula and Rodger Ryan serve fresh, wholesome food, and lots of it. No wonder locals hang out at the cozy Beetroot, tucked away in the Marketplace Mall, before hitting the slopes. Breakfast is the main draw and it’s available from 7:30 a.m. until 1 p.m. weekdays (2 p.m. weekends). Fortify yourself with The Original, which features two free-range eggs poached or scrambled, four rashers of bacon, crispy fried hash browns, and thickly sliced multi-grain toast. Or choose Belgian waffles with creamy Greek yogurt and blueberries. At lunch, there are soups, salads and traditional Irish stew---the best of its kind in Whistler. Those who find the spot too cramped---there are only two dozen seats---opt for easy take-out or arrive at an off hour. |
