For architectural prowess, the Sydney Opera House is world-famous, and over the years, the cuisine offered there has aimed to match the venue. After a complete revamp of direction, chef, restaurant name and menus, and a 2015 reopening, once again the food is right on key. Chef Peter Gilmore is no stranger to Sydney waterfront restaurants. He still helms long-established Quay across the harborfront, but here, it’s with the assistance of head chef Robert Cockerill. Even décor shimmers in reflection of the city lights and harbor, and Gilmore’s made-over kitchen is ready for all comers. Like other top chefs in the city, he is a fan of using the freshest local produce and seafood. There are several options for dining. The Restaurant is upmarket yet relaxed, with service beginning early enough for pre-theater patrons. Cured & Cultured offers accessible eating and a view of the chefs at work on the central level, with a menu centering on raw and cold produce, often a single pristine ingredient. The Circle has been redesigned as a casual platform boasting views over the entire restaurant as well as the bridge and harbor. The Bar is ideal for guests to meet before or after a show over a drink, a snack, supper or dessert. The two- to three-course menu might include line-caught southern squid with charred pickled cucumber and munyaroo, Tasmanian pepper and verjuice, followed by roasted Holmbrae duck with raw and pickled hispi cabbage, black miso, freekeh and seaweed. Then it’s a simple dessert of Pavlova or “chocolate cake from across the water.” The latter is code for Gilmore’s eight-layer cake, served at Quay, and you would be wise to order it. The Australian wine industry is well exhibited in the wide selection of wines available. Cocktails are first-rate.
