From the outset, this restaurant turned heads by matching smart small dishes with excellent wines. Today, Sydney is in full-scale tapas mode, but this was one of the trendsetters. Nicknaming themselves “the Bentley Boys,” the experienced duo of chef Brent Savage and sommelier Nick Hildebrandt take an adventurous approach to matching wine and food. The tapas menu includes dishes such as soft free-range egg with almond bread crunch, and kingfish ceviche with pickled watermelon and coriander. Entrées may offer the likes of poached rabbit with cocoa, pistachio and quince purée, and for mains, slow-cooked Berkshire pork neck with congo potato purée. The extensive wine list---a complex range of around 400 European and Australian wines---offers options by the glass, as well as 70ml or tasting sizes.
