Modern British cuisine emerged as a reaction against the drop in culinary standards after World War II, particularly in the 1950s and '60s. It takes traditional cooking as its base but adds international ingredients, flavours and cooking methods and draws heavily on Mediterranean influences while also incorporating Asian traditions. The Slow Food movement and the organic food trend have become important factors along with the emphasis on the quality of the ingredients and the wider use of herbs and leaves that grow naturally in hedgerows and fields.
