A new trend in French kitchens is gaining momentum: that of affordable gastronomy. These (mostly young) chefs have honed their skills with the great masters. But, contrary to their teachers, they turn their backs on expensive ingredients. They rely only on basic, simple products that anyone can buy in the markets and invent new dishes. Starting with such a foundation, they are able to offer delectable set menus for about €40. These inventive “artists” promoting unusual tastes are founding a cuisine that might become the standard of tomorrow.
