Having wowed critics as chef at the Valhalla in the Stein Eriksen Lodge in Deer Valley, then graduating from the Scottsdale Culinary Institute, Brandon Jaenish is shaking up local palates in St. George. Tropical-themed menu items like crispy calamari steak, blackened ahi and pineapple-soy-glazed scallop-and-halibut tower are embellished with tantalizing sauces ranging from sweet chili-herb aïoli to cilantro-lime to ginger butter. To start, you'll have a hard time deciding between the sesame-tomato bisque with Thai spiced shrimp and whatever happens to be the homemade soup of the day. The blackened Jamaica steak with bread pudding (a savory sausage-and-garlic stuffing) features tender shoulder perfectly seasoned with a cumin barbecue sauce. Comfortably classic wood chairs, linen tablecloths and gentle music combine with the exotic food to make you forget, if only for a moment, that you got here by cruising I-15.
