As Denver's fast-casual segment continues to soar, so, too, does the variety of cuisines. For proof, look no further than this elevated quick-casual eatery featuring a chalkboard menu of rolls and bowls steeped in South Indian culinary roots. The list is short: coconut curry chicken with spiced lentils and cashew-and-date biriyani; chicken vindaloo crowned with herbed yogurt and pepper slaw; garlic-and-ginger-scented masala beef; a vegetarian combo plate; and the Naddan bowl, a mix-and-match affair that gives diners a taste of the whole spectrum of flavors. The modern space, hued with playful graffiti scrawled on the brick wall, incorporates steel accents, scrap wood and a shelf of Indian spices that resides above the open kitchen. Along with chai and a mango lassi, the shop also offers craft beer and a solid lineup of offbeat, food-friendly wines.
