| Talk about ghost riders in the sky: this restaurant, high atop the 24-story hotel, is known for its dazzling view of the Las Vegas skyline. The plush Victorian décor features brocade-covered booths and oil paintings adorning the walls. We like the place for its charm and good service, and for the true cowboy-appetite-size steaks. The savory scampi à la maison is offered as an appetizer or an entrée. Mesquite-broiled Atlantic salmon with hollandaise and broiled chicken breasts with honey-Dijon sauce are tasty choices for non-carnivores. For beef-eaters, prime rib is always a favorite, along with the center-cut New York steak with melted blue cheese. The signature chicken-fried lobster tail features a pounded Australian lobster breaded and pan-fried. Save room for the appealing pies and cakes.
