: Chef Scott Carsberg, of posh, high-end Lampreia fame, re-created his dining concept to highlight innovative yet traditional small plates. Bisato’s refined, intimate space is dominated by a beautifully crafted wood bar. Warm lighting casts a romantic glow, but the overall ambience could use some perking up. Carsberg’s skill is revealed via the blini of red beets with gravlax, and in the homemade smoked ricotta pasta. Short ribs are braised in Barolo, the risotto features chanterelles, and a dish of folded pasta comes with octopus puttanesca. Sweet finishes feature orange confit with chocolate caramel mousse and lemon tart with strawberry sauce. Unlike many other Belltown bars, Bisato is quiet and serene with professional service. Sit at the bar to watch the chef create your meal.
