Named for the conical mushroom, not for some macabre musical instrument, Black Trumpet is the signature dining room of The Sandpiper Inn, a bed-and-breakfast in quaint Spring Lake, close enough to the Atlantic to hear the rolling surf and smell the salt air. Chef-owner Mark Mikolajczyk is a creative talent who likes to surprise with clever presentations. His “lobster cappuccino” features creamy bisque in a clear, footed coffee glass, and he places pan-seared fluke filets on the creature’s own tail as a serving platter. Mikolajczyk’s flavors are equally inspired, focusing on fresh regional and seasonal ingredients, from day boat bluefish to farm stand corn and tomatoes. A different hand-made pasta appetizer and select desserts are crafted daily. Service is polished and professional, if somewhat harried on busy summer weekends when the house is inevitably full. Opt for the cozy, carpeted, clubby dining room to the right rather than the noisier, terrazzo-tiled sunroom to the left.
