Blue Canyon Kitchen & Tavern Restaurant Review: Blue Canyon Kitchen & Tavern, built to resemble a timber lodge, is divided into five rooms and features polished blond wood, bare wood tables, rustic chairs, a stone fireplace and high ceilings. While the space itself is huge, it feels like the kind of place where you’re encouraged to kick off your boots and warm your toes by the fire. This rustic, homespun atmosphere spills over to the menu which features hearty American fare with casual nods to modern techniques and ingredients. Start with asparagus and wild mushroom flatbread topped with a rich balsamic reduction, or share the BC Yukon Gold potato chips paired with buttermilk blue cheese sauce. Then go for either the steak of the day or the sweet, soy-braised pork shank. Desserts change frequently; BC S’mores present a rich graham cracker peanut base with a chocolate peanut center and a homemade toasted marshmallow on top. The wine list is serviceable, as are the after-dinner drink and martini selections. On Sundays, Blue Canyon features a gut-busting brunch buffet with everything from scrambled eggs with cheese and cinnamon rolls, to pancakes with strawberry butter and a raw bar.
