Smoked low-and-slow until slipping off the bone, pulled pork has the right level of tarty sass; and Memphis-style ribs have sweet tang. Be sure to load up on sides like collards and beans, and note the presence of some urbane updates, like a barbecued burrito special that reels 'em in at lunch. And for dessert...what else?
