THIS ESTABLISHMENT IS CLOSED If you're not sure where to find the Bluebird Café, just head down Prytania Street around Touro Infirmary on a weekend morning and look for the line of regulars queuing up for a table. The cult-like status with which some folks regard this boxy, spontaneously decorated diner becomes perfectly reasonable once you've tried the huevos rancheros, the signature dish here. There is also an eggless version of this dish and many other options for both vegetarians and vegans. The rest of the menu includes competent renditions of such diner standards as corned beef hash, airy pancakes, fresh bran muffins, yogurt with fresh fruit and fried-egg sandwiches. On the counter and tables at lunchtime you'll find bounteous, flavorful burgers, tomatoes stuffed with a fine grilled-chicken salad and a variety of moist omelets.
