The green chile cheeseburgers at the Bobcat Bite, which opened in 1953, are deservedly legendary. In fact, they've been lionized in a documentary about the best hamburgers in America. The burgers are made just like they were back at the beginning, before anyone worried about fat or cholesterol. Current owners Bonnie and John Eckre grind the meat fresh every morning from chuck and hand-form it into ten-ounce patties. Topped with spicy roasted green chile strips and cheddar cheese, these are hamburgers to remember. The Eckres say they go through 200 pounds of beef a day serving customers in the tiny, off-the-beaten-path eatery, formerly a trading post. Named for the wild bobcats that used to hang out here waiting for scraps from the kitchen, the place is usually jammed, especially on Friday and Saturday nights. We like the steaks and pork chops, too, not to mention a side of sizzlin' home fries. Vegetarians take note: Your only option is a grilled cheese sandwich and a few side dishes, including potato salad.
