Born is a Thai restaurant with a twist: it pledges to reinvent Thai food. With this declaration, the kitchen sets about restructuring Thai classics to arrive at dishes that are not one thing or another, but simply a mix of pan-Asian tastes and textures at their most quizzical. Fresh Vietnamese-style summer rolls have the texture of mashed potatoes, and the peasant-like dish kao soi, or Burmese noodles, is a strange concoction that has more Indian than Thai features.
