BOSTON RESTAURANT NEWS

Openings

The interior of The Salty Pig With a name like The Salty Pig, the restaurant seems to poke fun at itself featuring a range of "salty pig parts" in the form of house-cured meats and small batch, hand selected cheeses. Inside this new Back Bay hot spot are blackboard-painted walls with chalk drawings featuring scientific equations and graphics along with a lengthy bar made of reclaimed wood as well as chairs made from recycled material. (Be sure to check out the 111 Navy Chair by Emeco, which is made of 111 recycled Coca-Cola bottles). If pig parts aren't your thing, order up a craft beer to go along with a wood-grilled pizza (our favorite is the fig with apple, goat cheese, truffle oil and red wine fig jam), mixed green salad, or fun "sammich." The Salty Pig, 130 Dartmouth St., Boston, MA 02116, 617-536-6200.

The dining area at FORUM Restaurant in Boston Restaurateur Euz Azevedo and his Boston Nightlife Ventures have just opened the two-story FORUM Restaurant in the former Vox Populi space. Sip a house-made vodka infusion or whiskey aged in barrels on the premises or order up a bottle of wine from their "penthouse" collection of more than 1,300 bottles. Appetizers include raw scallop crudo with pickled radishes, jalapeno oil, salmon roe and micro cilantro and a BLT soup of heirloom tomatoes, Boston bib spuma, braised pork belly and brioche croutons, served tableside. For dinner, don't miss the unique deconstructed beef tenderloin Wellington with seared foie gras and wild mushrooms or house-made spaghetti carbonara with bacon, ramps and farm egg yolk. FORUM Restaurant, 755 Boylston St., Boston, MA 02116, 857-991-1831.

The concept of Red Lantern was derived by Big Night Entertainment Group, creators of The Estate in Boston and Shrine at the MGM Grand Foxwoods. With the open kitchen, you can watch chefs prepare spicy lettuce wraps, Singapore Street noodles and Mongolian skirt steak while sushi chefs slice fresh fish for traditional sushi, nigiri and sashimi. The drinks menu here is fun with specialties like the Drunken Samurai martini made with pear sake and amaretto along with the yin (made with rum) or yang (filled with vodka) scorpion bowl to be shared among four guests. Dinner nightly. Red Lantern, 39 Stanhope St., Boston, MA 02116, 617-262-3900.

Perhaps Blue Inc. is named in honor of chef Jason Santos' trademark blue hair or he just likes the color but whatever the reason, Santos' culinary creations are red hot. Take, for example, the smoldering liquid nitrogen salsa or an orange gel that forms into noodles when it hits hot broth. His unique whimsical dishes, which combine Asian, French and traditional American flavors fused with visual and textural twists, were how he was selected to appear on Fox's "Hell's Kitchen," featuring chef Gordon Ramsay. For dinner, don't miss his signature honey and hoisin glazed duck confit or the boneless buttermilk fried chicken with habanero barbecue syrup. Dinner Mon.-Sat. Blue Inc., 131 Broad St., Boston, MA 02110, 617-261-5353.
