So named because the original of this franchise is in Shockoe Bottom, Bottoms Up in Glen Allen is the first spin-off. Both serve BU’s signature deep-dish pies by the slice or whole pies, 12 inches or 16 inches, beloved for sourdough crusts that have a Chicago chew and crispy, crunchy edges (thin crust available, too). Choose from the red sauce column (enticing combos such as spinach, ricotta, Italian sausage and onions) or the white sauce column (including the Chesapeake with fresh crab meat, sweet onions, and Old Bay) or become a general contractor and build your own from a beguiling array of meats, seafood, cheeses, veggies and fruit. But that’s just a fraction of the offerings; burgers, salads, sandwiches and pasta vie for popularity along with pockets, BU’s answer to the calzone. If you’re in the mood for pie squared, get the s’mores pizza for dessert. This suburban slice dishes up late-night noshing and specials, like Tuesday’s all-you-can-eat crab legs.
