| Chef-owner Scott Snyder has a flair for coaxing big bold flavors from seasonal foods. His style is modern American, but that should be defined as dishes spiked with the seasonings of many cultures with all their intense flavors, unexpected combinations and unique ingredients. We recommend his salad of grilled figs and arugula composed with prosciutto, candied hazelnuts and creamy mezzo secco cheese, and dressed with a citrusy vinaigrette. Snyder is especially adept in meat cookery, serving game, steaks, roasts and chops with skill. Grilled dry-aged rib-eye was prepared as ordered and arrived at table with an array of chanterelle and oyster mushrooms sharing the plate with green beans tossed with pistachios. Grilled venison loin paired well with a sweet potato purée and a mélange of morels and chanterelles. Spanish chips are among the à la carte side dishes that can be ordered for the table; they arrive still hot from the sizzling oil. Dinner in the wine room is a treat for any oenophile who will find the wine service professional and the wine list extensive. |
