The name says it all. It’s all brisket, all the time at this Williamsburg restaurant. The room is candlelit (at night, anyway) with plenty of exposed brick walls where diners order from the counter first and then commence feasting. BrisketTown’s “mayor” is Dan Delaney, who has mastered the art of smoked meat. He lugged a smoker to Brooklyn from Austin to ensure it would be the best. And brisket lovers will be satisfied. Meat is sold by the pound and you can have it lean or with the fat (we recommend the latter, as it’s more flavorful). The restaurant’s namesake meat is tender and retains much of the oaky/smoky taste. There are a few sides --- pork-spiked collard greens, for example --- but most people come here to fill up on one thing: meat, meat, and more meat. And once it runs out for the day, the employees turn off the smoker and go home.
