With built-in commerce from the motel to which this restaurant is attached, the Bukhara has the chance to familiarize Westerners with Indian cooking through its rather lengthy menu. While its service lacks polish, at least the kitchen competently handles such dishes as kabobs, breads, and dhal. The last here is a dark, rich blending of black lentils and spices. The lamb vindaloo is just hot and sour enough to pass muster, and the chicken tikka emerges from the tandoor with a fiery exterior. If you prefer or want to explore South Indian food, management offers the basic iddlies, dosai, and uthappam, all of which suggest that the kitchen has at least two regional chefs at work---Northern and Southern. The décor, not surprisingly, is regulation motel-coffee shop, but motel guests might not want anything too exotic at the end of the day.
