: BUNKER VIETNAMESE IS CHANGING LOCATIONS. Bunker may not be easy to get to but it’s worth the trek. Situated on an industrial block in Ridgewood, Queens (not far from Bushwick, Brooklyn), the eatery draws foodies and lovers of good Vietnamese food (something that’s hard to find in the Big Apple) from all over the place. Chef Jimmy Tu, who has worked in the kitchen at Eleven Madison Park, spent a lot of time hanging out with street food venders in Vietnam. And it shows. Banh xeo, a turmeric-laced crêpe stuffed with seafood and bacon, is thicker than what you would find in Vietnam but more satisfying. Cha ca la vong, a dish that is only made in one Hanoi restaurant, is a simple bowl of flounder seasoned with turmeric and ginger and sprinkled with peanuts. Tu’s version of the banh mi sandwich is loaded with the usual pâté, ham and cilantro but he uses a softer, less intrusive bread. Finish the meal with a bowl of coconut tapioca pudding.
