Chef Edgar Leal has worked with the best, from David Bouley to Spain's Ferran Adria, but his own cuisine is closer to that of South Florida's mango-gang of chefs, meaning an intriguing and complex updating of traditional Latin fare. Appetizers such as black tamal filled with spicy shrimp, and blackened salmon with pineapple chutney and tequila-lime beurre blanc provide an appropriately stimulating warm-up for ingenious entrées like rabbit with yuca gnocchi in mango sauce, or Peruvian leg of duck atop cilantro risotto. The decor, like the cuisine, merges opulent and classic design elements with the muted tones and clean lines of a contemporary dining space. Leal deals with Venezuelan winemaker Bodegas Pomar and prestigious Venezuelan chocolatier Chocolates El Rey to ensure a top flight wine list and dazzling sweets---you needn't love cocoa to love Cacao, but it would sure help you appreciate dessert.
