Cactus Restaurant Review: Cactus’ Southwestern and Mexican specialties are served in an upscale setting brightly illuminated with lanterns and strings of chili pepper lights. Standard dishes are given surprising twists, such as in the wild mushroom quesadilla with goat cheese and caramelized onions, a butternut squash enchilada with mole rojo, and bacon-wrapped, goat cheese-filled jalapeño peppers. Braised brisket tacos and chimichangas are available, too. A full bar, craft beer, and a wine list with Pacific Northwest varietals offer libations for everyone. For a sweet finish, the “Cowgirl” brownie is topped with vanilla ice cream, and bananas are caramelized in brown sugar. Other locations.
