Start your meal with thin-sliced yams, baked into chips and paired with a lively guacamole, or roasted heirloom tomatoes finished with basil and locally produced mozzarella. Entrées swing with the seasons, but could include ricotta- and herb-stuffed chard, creamy polenta topped with a colorful mélange of root vegetables or maple-glazed tofu over nutty wild rice.
